Healthy snack: Roasted Almonds (a little spicy)

One of the most beautiful things of Mallorca are the almonds trees. The country side is full with them. In february they treat us on some amazing blossom sceneries, which are absolutely stunning. And now in September it is time to harvest the almonds!

This week I was walking the dog through the country side and I picked up the almonds which had fallen from the trees. When I came home I thought what to make of these delicious nuts?

You can enjoy them as a healthy, low carb snack, in small amounts, almonds are a perfectly acceptable snack for low carb dieters of any kind. The only thing is that almonds, as great as they are, can get a little boring if you eat them regularly. So beside eating them raw, roasting  is a really nice alternative and in my opinion they get even nicer! So I grabbed a hammer and start cracking them one by one. Quite meditative activity I must admit… 😉 After a good 30 minutes I cracked a nice cup full of beautiful (organic) almonds.

I like a touch of spicy, so thought to spice them up before roasting them. This is my suggestion:

  • 1 cup raw almonds
  • 1 1/2 tsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1/2 tsp. cayenne
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt or to taste after cooking

Preheat oven to 160ºC. Mix all ingredients in a bowl until the almonds are well coated. Then take a cookie sheet or oven paper and spread the nuts out. Then bake them for 15 – 20 minutes or until golden brown. Stir half way through the baking time. And done, so easy, so yummie!
