March Nutrition Month recipe 1: Salmon with vegetables from the oven

Our first March Nutrition Month recipe will help you to vary your protein routine. Replace your meat for fish which is a very healthy protein source. Experiment with seafood by grilling or baking fish in place of some other protein food for dinner two times per week.

Fat fish, like Salmon, provides protein, but is also a good source of heart healthy fats called omega-3s.  Fatty types of fish are one of the few food sources of vitamin D – a nutrient many people are lacking.

So for this weekend try this healthy March Nutrition Month recipe from the nutritionist of Balneario de Archena: Salmon with vegetables from the oven

Healthy, easy to make ánd delicious!!

Ingredients for 4 people:

  • 800 grams of salmon
  • 1 onion
  • 1 Red Pepper
  • 4 potatoes
  • 1 lemon
  • 2 garlic cloves
  • Salt, pepper and fresh dill and parsley
  • Olive oil
  • Half glass of white wine

Method of Preparation:

Cut the potatoes into slices and season them to fry in a frying pan with the oil.

Cut the red pepper and the onion and stir-fry until soft, using the oil of the potatoes previously fried.

Pre-heat the oven to about 200ºC. Add a little oil in the oven tray, put a layer of potatoes and then a layer with the fried red pepper and onion, and finish with the salmon on top.

Sprinkle the juice of half a lemon over the salmon. Cover with the chopped fresh dill, parsley and garlic and sprinkle with white wine.

Put in the oven for 15 minutes. Serve with a green salad and….. Enjoy!!
