Healthy snack with a Mediterranean twist!

Mediterranean Diet, gazpachoIt is widely known that the Mediterranean diet is a varied, balanced and healthy diet. This diet meets the requirements of all dietary recommendations: it uses the right fats, with olive oil being the main source and it is rich in vegetables, fruits, legumes, grains, poultry and fish.

One of the emblematic dishes of this diet, is gazpacho, a super healthy drink/soup, prepared mainly with tomatoes, cucumber, peppers, onion, garlic, salt, bread and olive oil, which all provide great nutritional value and is a major source of vitamins, vegetable fibre, polyunsaturated fatty acids and minerals.

Gazpacho, Andalusia’s trademark food, is a cold soup or liquid salad made with fresh, raw vegetables. Gazpacho belongs especially to Andalusia, southern Spain. Here day labourers working in vineyards, olive plantations, citrus groves, wheat fields or cork forests were given rations of bread and oil for their meals. Bread soaked in water made a simple soup, to which was added oil, garlic and salt for flavour, plus whatever fresh vegetables were available – tomatoes, peppers and cucumbers in the summer.

A Spanish refrain says, ¨de gazpacho no hay empacho¨ – there’s never too much gazpacho.  It hits the spot any time of the day or night – a mid-morning snack, a starter at lunch, an afternoon refresher, an evening’s supper. It travels well – take it on a picnic. Eat gazpacho from a soup bowl, or drink it from a glass. Either way, it is tasty, refreshing and very healthy!

Try it for yourself, you can´t fail!

GAZPACHO ANDALUZ following Shanti Som´s recipe:

  • 2,5 kg Tomatoes (peeled)
  • 100 gr. old bread (soaked in water without crust)
  • 1 or 2 cloves garlic
  • 1 cucumber (peeled and deseeded)
  • Half fresh pepper (red)
  • Salt
  • 2 spoons vinegar
  • 8 spoons olive oil

Mix and blend. Serve chilled with chili, chopped onion, tomato, cucumber and basil to garnish.
